Baking temperatures

How can you tell if your cakes and bakes are done?
If you’re in any doubt, you can take the internal temperature. Below are the suggested temperatures.

What temperature should a sponge cake be cooked too?
The internal temperature of a sponge cake when properly cooked is 95-98°C

What temperature should a fruit cake be cooked too?
The internal temperature of a fruit cake when properly cooked is 98-100°C

What temperature should rich dough bread be cooked too?
The internal temperature of Bread (Rich Dough) when properly cooked is 77°C

What temperature should lean dough bread be cooked too?
The internal temperature of Bread (Lean Dough) when properly cooked is 88-93°C

What is the recommended water temperature for yeast?
The water temperature for yeast is 41-46°C

What is the setting point for jam?
The setting point for jam is 105°C

Confectionery temperatures

What are the different temperatures and stages of sugar caramelization that are critical for confectionery?
The sugar temperature for thread (syrup) stage is 110-112°C.
The sugar temperature for soft ball (fondants, fudge and pralines) stage is 112-116°C.
The sugar temperature for firm ball (caramel) stage is 118-120°C.
The sugar temperature if hard ball (divinity and nougat) is 121-130°C.
The sugar temperature of soft crack (taffy) stage is 132-143°C.
The sugar temperature of hard crack (brittles, lollipops and hardtack) stage is 149-154°C

First Foods temperature guide

If you are unsure about how warm your baby’s food and milk should be, we’ve created a handy guide to help. Take the guess work out of preparing food for your little one.

0 to 6 months

Your baby only needs breast milk or first infant formula milk. The serving temperature of first infant formula milk is 36.5-37.5°C (body temperature)

6 months+

Your baby’s first foods might include vegetable purees, fruit purees and a variety of mashed foods including potato, lentils and porridge. The serving temperature of purees and mashed food for baby’s 6 months+ should be 21-37.5°C

12 months+

By now your baby will be eating three meals a day and having family foods which might include favourites such as shepherd’s pie, curries and pasta sauces. The serving temperature of food for baby’s 12 months+ should be 4-46°C.
