Meat Temperatures

What temperature should chicken, turkey, duck, beef, lamb or pork be cooked to? When is it safe to eat?

The safe internal temperature for cooked chicken, turkey and duck is 74°C

The safe internal temperature for cooked sausages is 71°C

The safe internal temperature for cooked burgers is 71°C

The internal temperature for rare beef, lamb and veal is 52°C

The internal temperature for medium beef, lamb and veal is 60°C

The internal temperature for well done beef, lamb and veal is 71°C

The internal temperature for medium pork roasts, steaks and chops is 63°C

The internal temperature for well done pork roasts, steaks and chops is 71°C

The safe internal temperature for cooked fish is 60°C

Baking temperatures

How can you tell if your cakes and bakes are done? If you’re in any doubt, you can take the internal temperature.

The internal temperature of a sponge cake is 95-98°C

The internal temperature of a fruit cake is 98-100°C

The internal temperature of Bread (Rich Dough) is 77°C

The internal temperature of Bread (Lean Dough) is 88-93°C

The water temperature for yeast is 41-46°C

The setting point for jam is 105°C

Confectionery temperatures

The different temperatures and stages of sugar caramelization are critical for confectionery.

The sugar temperature for thread (syrup) stage is 110-112°C

The sugar temperature for soft ball (fondants, fudge and pralines) stage is 112-116°C

The sugar temperature for firm ball (caramel) stage is 118-120°C

The sugar temperature if hard ball (divinity and nougat) is 121-130°C

The sugar temperature of soft crack (taffy) stage is 132-143°C

The sugar temperature of hard crack (brittles, lollipops and hardtack) stage is 149-154°C

First Foods temperature guide

If you are unsure about how warm your baby’s food and milk should be, we’ve created a handy guide to help. Take the guess work out of preparing food for your little one.

0 to 6 months

Your baby only needs breast milk or first infant formula milk. The serving temperature of first infant formula milk is 36.5-37.5°C (body temperature)

6 months+

Your baby’s first foods might include vegetable purees, fruit purees and a variety of mashed foods including potato, lentils and porridge. The serving temperature of purees and mashed food for baby’s 6 months+ should be 21-37.5°C

12 months+

By now your baby will be eating three meals a day and having family foods which might include favourites such as shepherd’s pie, curries and pasta sauces. The serving temperature of food for baby’s 12 months+ should be 4-46°C.
