This is one of the best purchases in my kitchen: thermapen is very fast to read temperature, it is very easy to clean and store.
I used it to check flour, water and sourdough temperature when proofing. I was worried that poking the dough would make it collapse, nothing like that. This tool really helped me to achieve better results in the kitchen.
Set this up for an overnight boston butt on my WSM and was an absolute game change. Weather was pretty cold and close to zero so this with the billows kept the WSM steady all night.
