BBQ Steak, Eggs & Crispy Potatoes

This BBQ steak, eggs and potatoes recipe is a flavour-packed crowd pleaser. Learn how to cook steak perfectly using internal temperature, crisp up golden potatoes in a cast iron pan, and top it all off with runny eggs and zingy homemade chimichurri. It’s the ultimate BBQ breakfast or indulgent dinner.

Ingredients

  • 1 ribeye steak (approx. 350g)
  • 2 large eggs
  • 250g Maris Piper potatoes
  • ½ cup olive oil
  • Handful of fresh parsley, chopped
  • 2 garlic cloves, minced
  • 1 tsp chilli flakes
  • 1 tsp dried oregano
  • 2.5 tbsp red wine vinegar
  • 2 tsp garlic powder
  • 2 tsp onion powder
  • 2 tsp smoked paprika
  • Salt, to taste

Method

1. Preheat your BBQ to 200°C using indirect heat. This setup is ideal for roasting potatoes evenly without burning.

2. Place a cast iron skillet on the BBQ with a splash of oil and allow it to preheat for 15 minutes.

3. Prep your potatoes:

  • Cut into small cubes.
  • Drizzle with olive oil and toss with garlic powder, onion powder, paprika and a pinch of salt.

4. Cook the potatoes in the cast iron pan on the BBQ. Stir or flip every 10–15 minutes for even browning. They’ll take about 40 minutes to become crispy on the outside and fluffy inside.

5. Make your chimichurri sauce:

  • Combine parsley, garlic, chilli flakes, red wine vinegar and olive oil in a bowl.
  • Adjust the olive oil to your desired texture.
  • Store in the fridge until you’re ready to serve.

6. Remove the potatoes once they’re golden and soft. Set aside.

7. Set your BBQ for direct grilling and increase the heat to 250–300 °C.

8. Season your ribeye steak generously with salt. Place directly over the hot coals.

  • Flip every minute to create a crust.
  • After a couple of flips, start checking the internal temperature with a digital meat thermometer.
  • Aim for 53 °C for medium rare. (Use a reliable instant-read thermometer for accuracy.)

9. Let the steak rest for a few minutes. While resting, place the pan back over the heat, push the potatoes to one side and crack in the eggs.

10. Fry the eggs until the whites are set but the yolks are still runny – perfect for dipping into.

11. Slice the steak, layer it over the crispy potatoes and eggs, and top with your chimichurri.

  • Finish with flaky sea salt.
