Thermapen classic.

Bought this after acquiring an air fryer and wanted to ensure meat was properly cooked. Could have bought one for half the price but wouldn’t have been confident I was getting an accurate reading. The fact that everyone of these is calibrated and has the certification to go with it warranted the extra money in my opinion. The readings are fast and clear and as I’ve already said I’m confident they’re accurate. However it is really quite stiff to open out, to the point that although you want to open it from the furthest point from the base because of that, I’m not confident it wouldn’t bend. I did phone and report this but got the answer that it’ll free off in time. I’m only using it once a week so I opened and closed it about 30 times to represent 6 months use and it was no different. I wonder if a few drops of a silicone lubricant might ease it a bit but of course I’d need to okay that first in case it might void the warranty. I will say though that this wouldn’t stop me recommending it as I do feel an accurate reading is a must when cooking meats especially.

sturdy, reliable and green

I bought the green thermapen classic to replace my 15 year old (yes, 15 years -- who gets to say that about anything these days?) thermapen classic. It's sturdy, reliable, the digits are big, and, yes, it tells the temperature accurately. I can't recommend highly enough.
