How to use a meat thermometer?

For small cuts (steaks, burgers, wings, sausages)

  • Hold the meat between a pair of tongs and probe the centre/thickest part, being careful not to push the probe through to the other side. 
  • Check the thermometer reading. 
  • Make sure to check a few items, as some can be cooked while others might be underdone. 

For big cuts (whole chickens and turkeys, roasting joints) 

  • Push the meat probe into the thickest part of the meat (i.e. chicken breast). 
  • Watch the temperature drop and then rise again as you move the thermometer through the meat — this helps find the coolest point. 
  • Once you have checked that the thickest part has reached temperature, probe the meat in a few more places to make sure it’s cooked all over. 

Tip: Avoid bones and gristle, as they can give an inaccurate reading. 

Can you leave a meat thermometer in the oven while cooking?

You can leave a wireless or alarm thermometer probe in the oven while cooking, such as the RFX and DOT thermometers. However, plastic displays must stay on the outside of the oven. 

Instant-read thermometers like the Thermapen cannot be left in the oven while cooking.
