  • Baked salmon steaks with crunchy Thai salad 🌶️
Packed with vitamins and omega 3, this quick and healthy recipe makes the perfect midweek meal 💪🏻.
Serves 4 – 6.
For the salmon: 
	•	4-6 salmon steaks
	•	Olive oil
	•	2 lemons (thinly sliced)
	•	Seasoning
For the dressing:
	•	3 garlic cloves (crushed)
	•	3cm fresh ginger (grated)
	•	Zest and juice of 1 lime
	•	50ml light soy sauce
	•	50g honey
	•	250ml peanut oil
	•	50ml sesame oil
For the salad:
500g frozen edamame beans
400g kale
3 large carrots (peeled)
1 red pepper
1 yellow pepper
50g fresh coriander
2 spring onions
Sesame and pumpkin seeds
	1.	Cook the edamame beans according to the packet.
	2.	Thinly slice the baby kale, carrot, peppers, spring onions and coriander. Mix together.
	3.	Toast your sesame and pumpkin seeds and add to the salad.
	4.	To make the dressing combine all ingredients. Keep enough to spoon over each salmon steak. Add the remaining to the salad.
	5.	Season the salmon with salt, pepper and oil.
	6.	Line a baking dray with the slices of lemon. Place each piece of salmon skin-side down onto the lemon slices.
	7.	Bake the salmon until it reaches around 60C.
	8.	Drizzle the steaks with the left-over dressing and serve with a generous amount of salad.

  • It’s the season for pheasant and we’ve got an epic recipe for you.🍽😏
Beautifully buttery, juicy pheasant meets salty bacon and sweet parsnips in this comforting roast pheasant dish.

2 pheasants
50 g butter
100 g bacon lardons
1 celery stick, roughly chopped
1 large carrot, roughly chopped
8 shallots, peeled and cut into 2
4 thyme sprigs
500 ml cider
300 ml chicken stock
3 parsnips
100 g hazelnuts, toasted and roughly chopped
Vegetable oil


1. Heat oven to 170°C fan/gas mark 5. Melt the butter in a large, non-stick ovenproof dish. Season the pheasants, add to the dish and brown on all sides. Remove and set aside.

2. Add the bacon, shallots, celery, carrot and thyme to the dish and cook until the onion is soft, and the bacon is crisp. Pour off any excess fat and return the pheasants to the dish. Pour over the cider and the chicken stock, bring to a simmer, cover with a lid and cook in the oven until the birds have reached an internal temperature of 74°C.

3. Whilst the pheasants are cooking, prepare the parsnips. Peel and cut the parsnips into equal-sized long batons and par boil for a few minutes. Add the par boiled parsnip batons to a baking tray with a knob of butter and cook until golden all over.

4. Top the parsnips with the toasted hazelnuts and serve with the pheasant, vegetables, and a drizzle of the cooking juices.

  • Create your own Chinese fakeaway with this quick, easy and delicious beef in black bean sauce takeaway recipe by @thenotecook . 


300g Tri-tip (rump tail)
1 large white onion
2 red peppers
1 spring onion
3 garlic cloves
1 thumb-sized piece of ginger
2 tbsp Chinese black beans
1/2 tbsp sesame oil
2 tsp granulated sugar
1 pinch five spice
1 tbsp light soy sauce
2 tbsp Shaoxing wine
2 tsp cornflour
150ml chicken stock
2 tbsp vegetable oil

1. Create a marinade for your beef by combining your sesame oil, sugar, five spice, soy, Shaoxing wine and cornflour. Rub the marinade well into the beef.

2. Sear your beef on each side in a hot wok with plenty of oil. Reduce the heat and cook until the internal temp is 52C. Leave to rest. 

3. Create your black bean paste by crushing your garlic, ginger and black beans.

4. Prep your veg and stir fry them in the black bean paste. After a couple of minutes add chicken stock. Cook for a few minutes at a high temperature until the stock reduces and is sticky. 

5. Serve by slicing the steak thinly and placing it on top of your veg. Finish with thinly sliced spring onion.

Why We Rest 👇
Resting meat improves the taste and texture by allowing the temperature to even out and the internal juices to thicken. 

A Delicate Sole 🐟
Fish is typically thinner than meat, and the muscle is structured differently, giving it a more delicate texture. Because of this, any changes in temperature and juiciness would be small and could compromise serving it whilst it's still warm. 

The Odd One Trout 🔪
There is an exception. Whole fish lose less heat while they rest because they're enclosed in skin. Dense fish like tuna or monkfish can firm up during a rest, reducing flaking and making slicing cleaner.
